1 can ShariAnn's Tomato with Roasted Garlic soup
2 cups dry orzo
1/2 cup water
1 med zucchini, sliced thin
8-10 mushrooms, sliced
8-10 leaves spinach, washed and chopped
1/2 cup grated parmesan cheese

(optional)

 

Place orzo in 9 x 9 square baking dish and cover with water. Layer in order, spinach, zucchinini, and mushrooms. Pour soup on top and sprinkle with cheese. Bake at 400 degrees for 25 - 30 minutes. Remove from oven and let stand for 5 minutes.
serves 4 - 6

1 can ShariAnn's Cream of Tomato Soup
2 lbs chicken breasts, sliced thin, OR
2 lbs tofu diced in one-inch cubes
1 cup fresh mushrooms, sliced
1/4 cup olive oil
1 small onion, diced
1 clove garlic, minced
1 tsp sea salt
1/2 tsp pepper
1/2 tsp cayenne pepper
1 bay leaf
1/8 tsp thyme
1/2 tsp basil
1/4 tsp marjoram

Saute chicken in oil with onion and garlic until chicken is no longer pink.
Add remaining engredients and simmer for 45 minutes in covered sauce pan. Serve over pasta or rice.
